Grab & go dark chocolate granola bites are a treat when you need a healthy energy boost throughout the day. Packed with oats, flax, and crunchy crisps.

- 6 tablespoons honey
- 2 tablespoons brown sugar
- ¼ teaspoon vanilla
- ½ cup peanut butter, creamy
- ½ cup dark chocolate chips, 60% cacao recommended
- 1 cup rolled oats
- 1 cup rice crisps
- 2 tablespoons flaxseeds, ground
- 2 tablespoons oat bran
Directions
- In a saucepan, heat the honey and brown sugar for 1 minute over medium heat until brown sugar is dissolved. Add vanilla and stir to combine. Add mixture to a mixer fitted with a paddle.
- Add peanut butter and ¼ cup chocolate chips and mix over medium speed until combined and chocolate has melted, about 2 minutes.
- In a medium-sized bowl combine oats, crisps, flaxseed, and oat bran. Pour into the mixer and combine over medium-low speed, about 1 to 2 minutes.
- Using a mini cupcake tin, enough to make 24 cups, add a heaping tablespoon of the dark chocolate granola mixture into each cup. Press down on the mixture firmly. Each cup should be at least ¾ full with the mix.
- Refrigerate for at least an hour or until the cups have hardened and are easy to remove with a small knife.
- To make the chocolate drizzle, melt ¼ cup of the dark chocolate chips in a double boiler or a small bowl fitted over a pot of simmering water. Stir the chocolate chips until melted and smooth.
- Transfer melted chocolate to a small resealable plastic bag, cutting off a small corner of the bag to allow the chocolate to be piped. Drizzle the chocolate over each granola bite. Refrigerate until the chocolate has hardened.
